Probably yeah. I tried dex first and it has neither the defense, greatshields or heavy stagger weapons of a strength build, and none of the bleed of having some arcane. Truthfully the best bleed weapons enjoy dex though, like helice, eleonora's, Rivers of Blood. Bleed is definitely strong enough to just use that instead.
